This coffee, grown by Jairo Arcila on the Santa Monica farm, is a 100% Gesha micro-lot. The cherries were subjected to a meticulous process, which included 24 hours of dry aerobic fermentation and 50 hours in Grainpro bags at temperatures below 22°C. They were then dried on raised beds until the ideal moisture content of 11% was reached. Special edition coffee beans, vacuum-packed 200G

We put coffee and add 30 grams of water for the pre-infusion. Wait 30 seconds.
Add water up to 220 grams or milliliters.
Do not stir.
Place the previously heated metal filter.
We invert and extract for a maximum of 2 minutes.
