The Gutiti Natural lot from Yirgacheffe, Ethiopia, features the Kurume variety cultivated by around 600 smallholders at 2,200 masl. The cherries are carefully sorted in water to remove floaters and then sun-dried on raised beds for 14–20 days, being turned frequently for even drying. The result is a vibrant cup with notes of raspberry and toffee.
