Sironko comes from various small farmers of Mt Elgon, a forest area that reaches up to 2500 meters of altitude and that receives large quantities of precipitations.
After collecting the cherries, they spend only a little time on the drying bed to ensure the coffee retains enough moisture to bring about its distinct profile after up to 3 days in the fermentation tanks.
