Laayyoo Natural is produced by farmers around Teraga and processed by Sookoo Coffee. Laayyoo Natural is mainly composed of the landraces 74110 and 74112, selected for their productivity and disease resistance. In season, a thorough sorting process eliminates over-ripe or under-ripe cherries. The coffee is then dried on African beds in full sun. Sookoo Coffee’s attention to detail distinguishes its coffees, prioritising quality over quantity.
