Weimar Lasso cultivates this coffee on the El Mirador farm, where only the ripest cherries are meticulously selected. The cherries have undergone a 40-hour anaerobic fermentation process before being pulped, gently washed and sun-dried to the ideal moisture level. This micro-lot is composed entirely of Java beans, a natural mutation of the Typica variety that originated in Ethiopia. It was taken to Indonesia and named Java, before being introduced in Costa Rica in 1991 and eventually arriving in Colombia in 2010.
